Vegetable Sushi Bowls

Bowls with sushi-style stuff like rice and seaweed and asian flavors

Want all of the complex flavors of the best vegetable sushi rolls without the roll? Make a Sushi Bowl! The wasabi mayo really kicks this dish up a notch but can over power the other flavors if you overdo it.

Ingredients

  • Rice
  • 2 Tbsp rice wine vinegar
  • 1/2 English cucumber
  • 1 Tbsp soy sauce (divided)
  • 2 tsp sesame seeds
  • 8 oz mushrooms (shitake and cremini)
  • 6 oz carrots
  • 3 Tbsp sesame oil (divided)
  • 2 tsp wasabi paste
  • 2 Tbsp mayonaise
  • 1 avocado
  • 1 sheet of nori

Directions

Cook the Rice

  1. Cook the rice.
  2. Once the rice is cooked, add 1 Tbsp rice wine vinegar and fluff with a fork

Prep Ingredients

  1. Rinse the cucumber, quarter length-wise, and cut into 1/4th-inch slices
  2. In a medium bowl, mix cucumber, 1 tsp soy sauce, 1 tsp sesame seeds, 1 Tbsp rice wine vinegar, 1/4 tsp salt, and pepper.
  3. Remove mushroom stemsp, wipe clean with a damp paper towel, and roughly chop
  4. Rinse carrots, and cut into round slices 1/4th-inch thick

Cook Mushrooms

  1. Heat 1 1/2 Tbsp sesame oil in a large pan over high heat
  2. When oil is shimmering, add mushrooms and cook, sritting occasionally, until brown and tender (~7 minutes)
  3. Add 2 tsp soy sauce and cook 30 minutes more to reduce
  4. Remove pan from heat, add pepper

Cook Carrots

  1. Heat 1 1/2 Tbsp sesame oil in a medium pan over medium heat.
  2. When oil is shimmering, add carrots and cook, stirring occasionally, until softened (~6 minutes)
  3. Add 1 tsp sesame seeds, 1/4 tsp salt, and pepper, and stir to combine (~1 minute more)

Make Wasabi Mayo

  1. Combine wasabi paste with mayo, 1/8 tsp salt, and pepper

Plate

  1. Put rice in a bowl
  2. Halve avocado and cut into slices, put slices on rice
  3. Cut nori into fancy shapes; put nori on rice
  4. Put cucumber on rice
  5. Put mushrooms on rice
  6. Put carrots on rice
  7. Top with a wadjulus of wasabi mayo
