Spinach Muffins

Green healthy muffins. Good with butter.

Green muffins

Ingredients

  • 2c flour, whole wheat
  • 1 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 teaspoon baking soda
  • 1/4 tsp salt
  • 1/2c butter, unsalted
  • 3/4c milk
  • 1/2c honey
  • 1 large banana
  • 6oz raw baby spinach
  • 1 large egg
  • 1 tsp vanilla extract

Directions

  1. Preheat the oven to 350F
  2. Line a muffin pan with silicone muffins cups
  3. Combine all dry ingredients in a large mixing bowl
  4. Heat the butter until just melted
  5. Using a blender or food processor, blend the spinach, banana, honey, milk, egg, banilla, and melted butter until completely pureed.
  6. pour the puree into the dry ingredient bowl, and fold together gently until just combined (do not over-mix).
  7. Spoon the batter into the muffin pan, and bake for 18-22 minutes, or until the muffins are firm to the touch on top, but not quite browning.
  8. Cool most or all of the way before serving or freezing.
