Noodles with tofu and peanut sauce

You can mash up an avocado and put it on bread, but you've gotta use the right seasoning. Here's how to do it so simple that even you can probably do it:

Ingredients

  • 8oz rice noodles
  • 1 block extra firm tofu
  • 1 Tbsp rice wine vinegar
  • 2 tsp sugar
  • 1/4c chunky peanut butter
  • 1 Tbsp soy Sauce
  • 1 tsp Sriracha

Directions

Prep the Tofu

You want the tofu to be dry so it will be crispy.

  1. Dry the block of tofu, and wrap it in a towel
  2. Place something heavy on it to squeeze out more moisture
  3. Let it sit for 30 minutes

Cook the Noodles

  1. Boil a pot of water
  2. Drop the noodles in, and take the pot off of the heat
  3. Let the noodles sit 10 minutes, then rinse it under cold water

Cook the Tofu

Either...

  1. Cut the tofu into slices, and fry it over medium-high heat

or

  1. Cut the tofu into cubes, and bake it at 420 until starting to brown

Make the Sauce

  1. Mix the vinegar, sugar, peanut butter, soy sauce, and sriraha together
  2. In a skillet, heat the noodles over medium high heat
  3. Add the sauce and tofu, toss to coat
