Egg Salad Sandwich

Simple Egg Salad Sandwich

Simple Egg Salad heavy on the mustard and served on toast.

Ingredients

  • 8 eggs
  • 1/2 cup mayonnaise
  • 4 Tbsp yellow mustard
  • 1/4 tsp paprika
  • toast

Directions

Prepare the Egg Salad

  1. Place eggs in a saucepan and cover with cold water.
  2. Bring water to a boil and immediately remove from heat.
  3. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  4. Place the chopped eggs in a bowl, and stir in the mayonnaise and mustard. Season with salt, pepper and paprika.

Make Sandwich

  1. Cool egg salad in the fridge.
  2. Toast bread and scoop on now cooled egg salad.
